dishes served in a Thali vary from region to region in Southeast Asia and are usually served in small bowls, called Katori in India. These "KATORIS" are placed along the edge of the round tray-the actual Thali: sometimes a steel tray with multiple compartments is used. Typical dishes include Rice, De, Vegetables, Bread, Papadums, Genie (yogurt), small amounts of Chutney Or Gherkin, and a sweet dish to top it all.3 Rice or roti is the usual main dish that occupies the central portion of the Thali, while side dishes such as vegetable curries and other delicacies mentioned above are circularly lined along the Thali round. Depending on the restaurant or region, Thali is made up of local delicacies. In general, a Thali starts with different types of breads such as Puris or Chapatis (Rotis) and different vegetarian specialties (curries).

Le Tandoor If
The tandoor (or tandoor) is a kind of terracotta oven shaped jar, traditionally buried in the ground.
It is used in Indian cuisine, called tandoori, especially that of Punjab. It is also used in Central Asia, particularly in Uzbekistan.
The tandoor is fed for a few hours in embers until the walls become sufficiently hot, the food being introduced once the fire is extinguished, often on a small spit (principle similar to that of the traditional bread oven).
